Thanksgiving Meal & Schedule

Thanksgiving is absolutely my favorite gathering. Our family loves to make nearly everything from scratch & it's so important that we prepare well & follow a schedule to make it all happen! Many hands make for easier work, so I figured it would be helpful to make it a blogpost, so that everyone helping this week will have a reference! I'll work on getting our recipes uploaded for everyone by next Thanksgiving... we for sure have our traditional recipes & we all look forward to enjoying our special dishes on Thanksgiving!

MEAT
Spatchcocked Brined & Oven Roasted Turkey
Spatchcocked Barbecued & Smoked Turkey

SIDES
Sausage & Sage Stuffing with Apples, Cranberries & Roasted Hazelnuts
Cornbread Stuffing
Cranberry Sauce
Roasted Parmesan Garlic Green Beans
Mashed Potatoes & Gravy
Candied Sweet Potatoes
Sourdough Rolls

Schedule

ONE-TWO WEEKS BEFORE

• Make a menu.
• Make grocery list, dividing into 2 lists: highly perishable items & semi-perishable items (like cranberries, butter, sugar pumpkins, and potatoes).
• Shop for semi-perishable items.

MONDAY

• Shop for highly perishable items.
• Make cranberry sauce
• Feed sourdough starter for rolls

​TUESDAY

• Make pie crust.
• Sauté veggies (and apples) for stuffings.
• Roast hazelnuts.
  
• Prepare sourdough rolls & place in fridge to rise overnight.

​WEDNESDAY

• Brine turkey in fridge.
• Allow rolls to rise at room temp 1-3 more hours. Bake rolls.
• Bake pumpkin pies. Store at room temperature.
• Cube sourdough bread for stuffing. Let sit out overnight.
• Bake cornbread for stuffing. Let sit out overnight.
• ​Cook sausage for stuffing.
• ​Boil sweet potatoes.
• Assemble candied sweet potatoes
• Toss green bean recipe together in a bowl & reserve overnight in fridge.

​THANKSGIVING DAY

• Bake spatchcocked turkey​
• Barbecue spatchcocked turkey
• Bake green beans. 
• Bake stuffings.
• Bake candied sweet potatoes
  
• Steam or boil potatoes.
• Make mashed potatoes.
• Make gravy.
• Make whipped cream right before pies are served.
